Default A Receipe from Hua Hin- Thai fish

This is not strictly one for a travel forum so I hope MarkAdmin doesn't mind me posting it here. However, it is a nice dish I picked up from the Beach Cafe in Hua Hin last trip and they had it printed out so I thought I would share it with the "foodie" forum members, especially those who like a nice fish meal and something that is easy to prepare. It goes well with Salmon or any white fleshed fish.

Spice Crusted Fish Fillets-(for 4 people)

Ingredients:

1/4 cup peeled and chopped fresh ginger
2 Tablespoons sesame seeds
2 Tablespoons coriander seeds
1/2 Teaspoon crushed red chillis
1 Clove garlic, peeled
3 Tablespoons extra virgin olive oil,plus extra for oiling the fish
4 Nice sized fish pieces for 4 people
Sprinkiling of salt

Preparation:

Position a rack in the centre of the oven on a baking tray- heat oven to 190 c

Combine ginger, sesame,coriander, chilli, in a food processor and process until the mixture is finely chopped.

With the food processor still running drizzle the olive oil through the feed tube.

Rub some oil onto the fish and place on the rack skin side down.
sprinkle some salt- to your taste over the fish

using your hands spread the spice mix paste over the fish
roast until the fish is done to your taste. Medium rare will be about 15 minutes and 20 minutes is just about right for a piece of Salmon for my liking. Don't cook longer than 20 mins or it will be too dry.

Serve with rice and some green vegetables.- decorate the fish with some roasted garlic if you like.

I feel like Im stuck in a rut when I am cooking fish lately , and Its always nice to know easy & simple recipes !

oh contraire, quite appropiate, especially for us that take advantage of a kitchen in serviced apartments........

Thanks - I will try this one out! Always on the look out for authentic Thai recipes to use - if anyone has any other recommendations then please post away on this thread. By the way, it's SteveAdmin - MarkAdmin left a few years ago when he sold the site to me
