One other thing. I'm not surprised by the negative review. I have noticed that these "brand chefs" who spread their efforts widely, have to rely on tip top chefs to keep their reputation afloat.
Paul Bocuse found that out the hard way (he almost went bankrupt), just as Ramsay is now doing as well (and if reports are correct his financial position is perilous as well). If the principal can't keep his finger on the pulse(s) then things will go awry. Grossi has no worries in Bangkok at the present time, but when you have books to flog, radio commitments, cooking demonstrations, guest appearances on "Master Chef" and you start spreading our "brand" internationally, something has to give and generally it is the standard of the restaurant(s). It is inevitable.
