I would recommend you to start flying in to Chiang Mai and enjoy a lot of wonderful experiences there, then fly to Bangkok for maybe a couple of days there before you are heading south to the beaches for relaxing and digesting your experiences, and then maybe end up with a day or two (for shopping) in Bangkok before returning home.
