I have always just carried a photocopy of my passport, and current visa stamp, and never had a problem.
I have been checked maybe 5 times over the last 4 years, and only once, in a bar raid, was I escorted back to my hotel to show the police officer my original passport. They were very polite, and did not once hint that it was against the law not to carry it with me. There was no fine, and just a pleasant thank you, and we hope you enjoy the rest of your trip.
There are a lot of thing you do in Thailand that are technically against the law.
