It's very quiet on Ko Chang for sure! Don't go there if you require night life and entertainment. I prefer the island next to it, Ko Phayam, as the beaches are better IMO and it's marginally less quiet. Very undeveloped compared to the other places you're visiting though, so don't expect international hotel standards. Most resorts consist of simple cheap huts on or very near the beaches. There is electricity but it comes from generators and most places only have it for a few hours in the evenings. Cold water showers are also the norm.
A couple of new more up-market resorts have been built there in the last year there now though ...on the same beach where the Vijit resort is. They have A/C (and hot water presumably) but also sound systems, banana boats and jet skis no doubt....yeuch, that will ruin the place. I'm pleased to report that neither of these resorts seemed to have any guests but the simple old-style Vijits was fairly full.
Vsibility around both islands isn't great, so don't bother bringing your snorkelling gear. Ferries to both islands leave about 9am and 2pm from the pier just outside Ranong. There are twice daily speed boats to and from Ko Phayam too. Yes you can buy drinking water anywhere in Thailand and it's easy to find a place to stay on arrival.
