They take you on a boat, you see a few colourful boats come by, and when you could see what is left of that "floating market" they go the uposite side and take you to the crocodile farm.

They sell it even for the "real one"!!!

I would sugest you go the evening before to Damnoen Saduak, find a decent hotel there, and get up early before the tourist buses arrives, so you can feel the real vibe of the place. After that you can go wherever you want. If you are a small group, it is not that expensive to hire a chauffeur, with a small van, and you are more free to move around.

Worth the extra expense and effort. The first time we were in BKK, we payed for a guide and van a ridiculous low price, I think 2000 bath a day, will be more now, but still interesting.
