You can pick up the map in any good bookshop (and most crap ones too). I know asia books carry it, as do bookzaine, and many hotel giftshops. It marks out several good day and shorter tours,. including the times and places for monk chat. The monk chat is basically one or more monks (some to practice their english, and others to give wisdom and answers on life and Budhism) talk to Farangs at certain times in particular temples.
Go Thailand tours are located between Chang Khlan and the empress hotel, but the best thing to do to visit Tawai and other places, is to flag down a songhtaw and hire him for the day.
You should pay about 600 baht for the day - for a bit more comfort you could hire a van and driver (about 1200-1500 a day). You can also get the hiotel reception to write in Thai the places you would like to visit for the driver.
There are dinner cruises organised by the Good View restaurant and the riverside. Both serve good food in their restaurants, so I suppose the food on the cruises has a good chance f being good.
