Thought it would be interesting to hear people's choices.
For me, as I have kids and our holidays are usually family ones ... my best hotel ever is narrowed down to two;

Sunway Beach Lagoon Resort in Malaysia
Bintan Resort (Indonesia, but you get there by ferry from Singapore)

These haven't necessarily been our best holidays, but certainly have stayed in our memories of great hotels and a lot of fun.
