Hard to answer the "must see" part of your question ...different people have different tastes. I'd buy a guidebook or look at online sites about Thailand first. Then you can ask more specific questions about things that look interesting.
As for relaxing, well unfortunately Thailand can be a bit wet everywhere at that time of year so it's difficult to recommend beaches. Maybe Ko Samet, which has less rainfall than most places. The rains seem to clear from the north first, so perhaps you could consider a visit to Chiang Mai for a bit of culture and Pai afterwards for the relaxing.
Lots of cheap flights within Thailand and new routes opening all the time. Check out Air Asia, Nok Air and Orient Air. All can be booked online.
There are loads of shopping malls and markets in Bangkok. Stay a few days there at the end of your trip for the bulk of your shopping. That way you won't have to carry your purchases around with you all over Thailand. The weekend market at Chatuchak is a "must do" for shopoholics ...it's huge and you can buy almost anything there.
