Your trip sounds great and workshops interesting. But you have a problem in Bali if you want to both surf and snorkle at the same time. The surfing beaches are in the south, south west.. Uluwatu, Kuta, Canggu etc. For good snorkling you need to go north, beyond Amed to Selang Beach or Lipah Bay [north east] or Menjangan island [north west].
The quiet, calm waters at Lipah or Selang are also ideal for swimming.
The beaches at Kuta/Legian/Seminyak are great for surfing but have a dangerous undertow. My daughter who is a good swimmer, had a very scarey experience there.
