we have always used the royal princess
and like it. Many people report that it need some refurbishing, but we seem to have always been upgraded to a deluxe room (for no reason) and they seem fine, although short on drawers space. Wardrobe is quite big though, so we manage! It is right in the middle of the night market, so easy to visit this for short periods if you like.
We took a cooking class recently, and a couple in the class were staying at Baan Orapin and really raved about it. On trip advisor this comes out tops for B&B in CM, so might be worth a look.
A general point, it will be more fun to stay close to the city itself, eg inside the walls or in the night market rather than a more remote location. We found the empress too far away for our taste, for example.
