For me seafood is the biggest con on Phuket. I would perhaps take a table at the New Moon Restaurant Nai Harn Beach (next to the Le Meridien Yacht Club), but NOT the other restaurants next to it; they will try to get you to sit at theirs - be prepared - the owner goes to the fish market every morning and will show you the fish if you ask - very good price. Also, big recommendation is to go one evening to Friendship Beach (Rawai / Chalong), as they have a beachfront restaurant with superb views of the offshore islands, really nice, and the food is excellent and well priced too. If you get a chance to do your own BBQ, get thee to Phuket Town market early (8am at least) and go for some of the 2 or 3 prawn, yes prawn to a kilo monsters they sell. These "leader" prawns are from the ocean, not farmed, as they can not grow that size in captivity. Memories of eating these boys will make you salivate for years to come.
