If you are after an Internationally recognized legal marriage you have to be careful as there are strict requirements. The best religion to declare is Protestant (you can only be Muslim, Buddhist, Hindu, Catholic or Protestant in Indonesia as no other religions or variations are recognized), as Catholics have to produce more documents (Baptism certificate). So you need to pick your event organizer really carefully. This will require your sending them passport, etc. details (divorce papers if applicable, birth certificates) to get a statement of non-impediment from your nation's consul in Bali / Indonesia; this means you will also need to plan to go to the consul to collect this as they will not give it to anyone but you (in case it is for identity theft by another person). If you do not have a consul in Bali, they may have arrangements with a country that does so you may still not need to go to Jakarta if this is the case.
