I think May is just fine. You will save money and have less tourists around. I'd recommend a round trip. Start in Bangkok (also see the old capital), then check out Kanchanaburi and move to the South (I prefer the West coast). The northern parts offer some great landscapes, you should not miss Chiang Mai.
